What’s a summer grilling weekend without a good coleslaw recipe? This crisp red slaw fits the bill perfectly. With crunchy sunflower seeds and cabbage, crisp carrots and green onions, it’s a summer go-to salad. The added spoonful of honey brings an unexpected sweetness to this fresh summer slaw. Your family and friends will be delighted!
Serves 8
Ingredients:
- half head red cabbage
- 4 carrots
- ¼ onion (preferably Vidalia)
- 2 stems green onions
- 1 tbsp honey
- ¼ cup sunflower seeds
- 1 tsp salt
- 2-3 tbsp mayo (light or low fat)
Directions:
1. Peel and grate 4 long raw carrots, add to a large bowl. You can use a food processor for steps 1-3 if you like.
2. Chop red cabbage, add to the bowl.
3. Chop a quarter onion, add to the bowl. Pick a mild or sweet Vidalia onion to cut the bitter taste.
4. Chop a few stems of the green onions, add to the bowl.
5. Add a quarter cup of (preferably unsalted) sunflower seeds.
6. Add a tablespoon of honey, a teaspoon of salt, and 2-3 tablespoons of light mayo. Add the mayo gradually, depending on how light or heavy you like it.
7. Mix everything well and chill for at least 30 minutes to let the flavor set.
