Savory Kugel Recipe

Food was always at the center of every holiday in my family growing up. Gathering at the big table with delicious home-made dishes meant warmth, comfort and love. One of my favorite meals during jewish high holidays was a kugel. More often served sweet (typically with raisins), it’s been a mainstay, except I always wished it was salty rather than sweet. Starting with my grandma’s base recipe, I added a few ingredients and took some away, and the result is this scrumptious kugel. Wide egg noodles pair well with the softness of cottage cheese and sour cream, the zesty kick of the cooked paprika-spiced onions and the crunch of parmesan on top. Try this for your holiday kugel recipe or any other day. Everyone will be asking for leftovers!

Kugel Ingredients

  • 8 oz (typically ½ bag) of wide egg noodles
  • 2 large eggs
  • ½ cup light small curd cottage cheese
  • 1 cup light sour cream
  • 1 small onion
  • 2 tbsp butter (salted)
  • 1 tbsp olive oil
  • 1 1/2 tbsp paprika
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1-2 tbsp grated parmesan cheese

Directions

  1. Fill a large pot with water and set to boil.
  2. In a small bowl, crack 2 eggs. Add ½ cup small curd cottage cheese and 1 cup light sour cream, 1 tbsp salt and a bit of black pepper. Stir.
  3. Heat a medium pan, add olive oil. When warm, add small sliced onions. Cook a few minutes, then add 1/2 tbsp paprika and sprinkle of salt. Set aside to cool.
  4. Once cooled, add to the egg cream mixture and stir along with 1 tbsp paprika.
  5. Cook egg noodles in boiling salted water per package instructions – usually 8-10 minutes. Dry in a colander. Set aside for a few minutes to cool.cooked noodles example
  6. Preheat oven to 350 F.
  7. Melt 2 tbsp butter and add to the noodles, carefully stirring noodles to avoid breaking. Butter will keep the noodles from sticking.buttering noodles
  8. Mix the noodles with the egg cream, blend without breaking the noodles.kugel stirred
  9. Spray a medium-size baking dish with cooking spray and pour the noodles and cream in. Sprinkle with parmesan. Note, my dish is square, though traditionally kugel means round, so it’s sliced like a pie, but I am partial to the square slice, plus storage is easier.savory kugel
  10. Bake in 350 F oven uncovered for 40 minutes.Savory onion kugel
