Beet Salad Recipe

beets You can’t beat a 3-ingredient dish! And this beet salad is it. Beets are surprisingly meaty as a base for a salad. This beet salad also serves nicely as a side dish, perfect for steak or pork. Substitute mayo for light mayo if you want to reduce the fat.

Serves 4

Ingredients:

  • 2 large or 4 medium beets
  • 2 cloves garlic
  • 3-5 tbsp mayo

Directions:

1. Boil the beets the same way you boil potatoes – in a pot of salted water for about 30 minutes and/or until beets are soft (if a knife goes in easily). Cool them off for about 15 minutes.

2. Peal the skin from the beets. Once boiled, they are easier to handle. Your hands are likely to turn red from the beet juice. Squeeze a little bit of lemon or lime on your hands to help clean off the color.

3. Grate the beets. Use your food processor or a simple grater will do – use the larger grate.

4. Chop or press 2 cloves of garlic.

5. Mix the grated beets, garlic and mayo. Season with salt.
