Beef & Mushroom Cutlets Recipe

beef cutlets This recipe makes about 8 cutlets depending on the size. It’s easy to make, full of protein and low on fat. You can use a food processor to mix the ingredients; however this usually results in onions and mushrooms being cut into powder, so mix by hand if you can.
Make the cutlets with the beet salad and you got yourself an easy dinner in less than an hour.

Serves 4

Ingredients:

  • 1 pound lean ground beef
  • 1 small onion
  • 5 medium mushrooms
  • 1 egg
  • 2-5 tbsp breadcrumbs (Italian style best)
  • Worcestershire sauce
  • Fresh dill
  • Olive oil

Directions:

1. Ground beef should be defrosted but cold – it will make forming cutlets easier in the end.

2. Chop the onion and mushrooms in small pieces.

3. Add the chopped onion and mushrooms to the ground beef along with 1 egg.

4. Mix well; season well with salt and pepper.

5. Chop a small bunch of fresh dill and add to the beef along with Worcestershire sauce. Mix well.

6. Add breadcrumbs to the mixture. Depending on the consistency, you may need more or less than 3 tbsp. Cutlet consistency should be right for making patties, which is the next step.

7. Heat some olive oil in a large pan.

8. Form small patties from the beef mix and place on the pan. You should be able to make about 8 patties. Cover the pan.

9. Turn the patties over once one side has browned. Each side takes about 3 minutes.

Serve with rice, potatoes or a vegetable side, such as my potato or beet salad recipes.
