This multiple personality cake is a crowd pleaser – chocolate for some, vanilla for others – a mix of several great flavors, including a yummy chocolate coconut glaze. This cake is a lot of fun to make with your kids, especially the part where you actually make it a “zebra”.
Serves 12+
Ingredients:
CAKE
- 3 eggs (medium)
- 2 cups sugar
- 1 1/2 cup flour
- 1 cup sour cream
- 1/2 stick or 2 ounces of butter
- 2 tablespoons of cocoa powder
- 1/2 teaspoon baking soda
- a drop of plain white vinegar
CHOCOLATE GLAZE
- 1/2 cup of milk
- 1 cup sugar
- 2 tablespoons of cocoa powder
- 1 stick or 4 ounces of butter
Directions for Cake:
1. Beat 3 eggs and 2 cups of sugar until they have a consistency of foam. Use confectioner’s sugar for a smoother cake texture.
2. Add 1 cup of sour cream, continue mixing.
3. Place a 1/2 teaspoon of baking soda into a tablespoon and add a drop of vinegar to it to start a mild reaction, mix. Add to the batter.
4. Melt 1 stick of butter (2 ounces). Add to the batter slowly, continue mixing.
5. Add 1.5 cups of flour, finish mixing the batter.
6. Split the batter into two portions and move one (we’ll call it vanilla) to another bowl.
7. Add 2 tablespoons of cocoa to the remaining portion (we’ll call it chocolate) and mix well. Resist the urge to add more cocoa, as that can make this batter portion tougher and harder to spoon later on.
8. Heat up the oven to 375 F.
9. Take a rounded baking pan and butter lightly.
10. Place a tablespoon of vanilla batter into the middle of the pan. Then place a tablespoon of chocolate batter over. Continue placing a tablespoon of each kind of batter one over another. The batter will start sprawling around.
11. Bake at 375F for 40 minutes. Once the cake is almost ready, start on the glaze, which takes just a few minutes.
Directions for Glaze:
1. Heat up 1/2 cup milk and 1 cup of sugar in a small pot.
2. Add 2 tablespoons of cocoa and bring to a boil stirring continuously.
3. Add 1 stick of butter (4 ounces) and continue boiling until the mixture is smooth, mixing well.
4. Take off the heat, cool off for 10 minutes.
5. Glaze the Zany Zebra Cake all around.
6. Top with coconut shavings (or any kind of nut or chocolate shavings you would prefer). I love mine with a dash of coconut.
