I came up with this recipe when I realized we had the perfect ingredients in the fridge for chicken parmesan minus the chicken. Turkey steaks actually worked wonderfully in place of the chicken and infused garlic oil made the dish even more delicious. The trick here is to brown the turkey and seal the spices with the heat, and then cook low and slow with marinara sauce to get the juicy flavor. The reason I put mozzarella at the end is to avoid burning it and make the parmesan shine. After all, it’s turkey parmesan!
Serves 3
Ingredients:
- 3 turkey steaks
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 2 tbsp Montreal Chicken seasoning
- 1 tbsp oregano
- 2 tbsp panko bread crumbs
- 1 tbsp coarse salt
- 1/2 cup shredded parmesan cheese
- 1 cup shredded mozzarella cheese
- 1-2 cups of your favorite or homemade marinara sauce
Directions:
1. Heat up a medium pan and brown 3 minced garlic cloves in olive oil lightly, don’t burn.
2. Preheat the oven to 350F.
3. Wash and pat dry the turkey steaks. Season with the spices on both sides: Montreal chicken spice, oregano, coarse salt; sprinkle with panko bread crumbs.
4. Brown the turkey in the pan with garlic, about 3 minutes on each side, until brown; don’t overcook.
5. Spread a few spoons of marinara sauce on the bottom of the baking pan. Place the turkey steaks over.
6. Top the steaks with marinara sauce (about a spoon on each and spread) and parmesan cheese.
7. Place in the oven at 350F on the middle rack for about 25 minutes.
8. About 18 minutes into cooking, top with mozzarella cheese and continue to bake your turkey parmesan until ready.
