I love this vegetable for all the textures it brings to a dish. Here with a few savory ingredients, we make it a perfect side dish to meat, chicken or seafood. You should make sure you are using a sharp knife, since cutting the squash is a tough job. It takes a little time but you end up with perfectly clean cubes. The rest is a piece of cake.

Ingredients
- 1 large spaghetti squash
- 2 tbsp honey
- 1 tbsp garlic powder
- 1 tbsp salt, preferably coarse
- 1 tbsp paprika
- 1 tbsp olive oil
Directions
- Start by cutting the squash in half with a sharp knife and scooping the seeds (use a big spoon), so the inside of it is clean. Then, cut each part in half and then into 1-inch slices. Cut off the skin from each slice and cut in half again. You should have 1-2 inch cubes.
- Preheat the oven to 375° F.
- Line out the squash cubes on the tinfoil covered cooking sheet.
- Generously sprinkle the squash with garlic powder and salt.
- Mix the honey and olive oil in a cup and drizzle the squash with the mixture.
- Sprinkle paprika on top.
- Place in the 375° F oven and let it bake for 45 minutes.
- Place in a bowl and toss to coat all the pieces. Serve warm.
