I have to admit, this is one of my go-to-recipes. It’s a blend of simple flavors, easy to prepare and goes beautifully with steak, chicken or fish. I typically buy new potatoes and simply scrub them with a vegetable brush, but you can peel your potatoes if you like. Use more or less dijon if you like your potatoes more dry or creamy.
Serves 4
Ingredients:
- 2 pounds new potatoes
- 2 tbsp dijon mustard (smooth)
- 3 tbsp olive oil
- 4 garlic cloves minced
- 1 tbsp thyme
- 1 tbsp kosher salt
Directions:
1. Combine the marinade in a large resealable plastic bag: dijon, olive oil, garlic, thyme and salt.
2. Preheat the oven to 400F.
3. Wash and brush (and peel if you like) the potatoes, dry, cut in quarters. Place the potatoes in the marinade and massage in the bag to get the flavors to mix and absorb. If they can sit for a few minutes, that’s great but not necessary.
4. Move the Potatoes Dijon out of the bag and into the baking pan. Roast in the 400F oven for 30 minutes or until they are soft enough that a knife can cut through easily. Toss the potatoes 15 minutes into the roast.
