If you’re in a rush to put dinner on the table, nothing compares to eggs. Nutritional powerhouse, delicious and so easy to make into scramblers, frittatas, muffins, and so much more. This mini ham & egg cups recipe is always a win at our house – the miniature looking frittatas look cute enough to eat, and they are! They taste even better with organic eggs, Pete & Gerry’s for example. Pair with half a bagel (and cream cheese or other spread) and some fruit and dinner is served! Ready in 15 minutes. Serves 4 kids.
Ingredients:
- 4 eggs
- 1/4 cup shredded Italian blend cheese (or Parmesan or Asiago separately)
- 1/4 cup 2% milk (or whole for smaller kids)
- 1 tsp chopped fresh parsley
- 3 thin deli ham slices (swap for turkey or chicken deli slices if you like, but ham works best)
- 1 tsp salt
- 1 tsp Paprika (sweet, non spicy)

Directions:
1. Preheat the oven to 375 F.
2. Whisk eggs, then add milk, salt and paprika and blend well.
3. Chop ham into small bites, add to the mix along with the shredded cheese and chopped parsley. Stir well.
4. Spray the 12-cup mini muffin pan. Pour the egg mixture in each cup, a little under the top or higher if you like them to puff up more.
5. Bake at 375 F for 10-13 minutes. Watch the cups as they puff up. Once the top is up and firm to the touch, they are ready. Start checking after 8 minutes.
6. Eat immediately! They taste better warm.
