In the absence of travel opportunities, a deliciously prepared recipe can transport you to the desired destination. Blend in the flavors of just ripened tomatoes, fresh basil, fragrant garlic cloves and fresh fish and you can imagine yourself on the white shores of Greece or Italy. I picked cod but other flaky white fish varieties would work here too. Tempt your tastebuds with this Mediterranean cod recipe!
Serves 2
Ingredients:
- 2 pieces of cod (not frozen)
- 2 large tomatoes
- 2 cloves of garlic
- 1 medium white onion
- 1 tbsp chopped basil
- 2 tbsp coarse salt
- 1 tbsp olive oil
- cracked pepper to taste
Directions:
1. In a medium skillet, brown fine chopped onion in olive oil.
2. Mince 2 garlic cloves and add to the onion, stir and continue cooking.
3. Dice 2 tomatoes and add to the onion-garlic mixture, stir and continue cooking.
4. Preheat the oven to 400F
5. Chop the basil and add to the pan along with 2 tbsp of salt and some pepper, finish cooking for a few minutes. Set aside.
6. Wash the cod pieces and pat dry. Place half of the tomato mixture on the bottom of a cooking tray. Place the cod on top of the tomatoes. Cover the fish with the rest of the tomato mixture.
7. Bake the fish in the oven for 25 minutes. Cod is ready when it’s flaky.
