Meatloaf is a tried and true dinner staple. It may take over an hour but is extremely easy to make and you can do some chores while it’s baking. This recipe turns the usual into the unusual with a delicious layer of mushrooms in the middle of the loaf.
Serves 4
Ingredients:
- 1 pound ground beef
- 1/4 onion
- 4 large white mushrooms
- 1/3 cup plain bread crumbs
- 2 eggs
- 1 tsp garlic salt
- 1 tsp Worcestershire sauce
- 1 tsp coarse salt
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1-2 tbsp olive oil for cooking
Directions:
1. Heat up 1 tbsp of olive oil in a medium pan.
2. Chop 1/4 an onion and add to the pan. Brown stirring occasionally.
3. Chop 4 large white mushrooms (1/2″ pieces or less) and add to the pan with a little bit of garlic salt. Finish cooking and remove from heat.
3. In a good size bowl add together: ground beef, 2 eggs, 1/3 cup plain bread crumbs, a dash of garlic salt and coarse salt and a dash of Worcestershire. Mix well.
4. Heat up the oven to 350F.
5. Spray a coooking sheet with some cooking spray. Put half of the beef mixture on it forming a loaf.
6. Place the mushrooms over this first layer and the remaining half of the beef (2nd layer) over the mushrooms. It’s basically a meatloaf with an onion/mushroom layer in the middle. Pat and form a loaf.
7. Bake at 350F for 50 minutes.
8. 30 minutes into baking, mix 1/4 cup packed brown sugar with a 1/4 cup of ketchup and glaze the meatloaf. Put it back in the oven for the remaining 20 minutes.
Let cool off for 5 minutes before slicing. They will surely ask for seconds!
