Whether it’s Valentine’s Day or a special day for someone, chocolate is a perfect answer. These cupcakes are fairly easy to make and hold a few special ingredients that make them unique. Bring all ingredients to room temperature before baking – it will make the process easier. These chocolate berry nut cupcakes are a real delight.
Makes 12 cupcakes
Ingredients:

- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 cup white sugar
- 1 cup cocoa powder
- 3 eggs
- 1/2 cup milk
- 4 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 cup dry cranberries
- 1 cup chopped walnuts
- 1 teaspoon orange zest

Directions:
1. In a large bowl, combine dry ingredients – flour, baking powder, cocoa powder, salt and sugar.
2. In another bowl whisk the butter, eggs, milk and vanilla extract. Stir into dry ingredients until well blended and moist.
3. Fold in chocolate chips, dry cranberries, walnuts and orange zest; mix well.
4. Fill greased or paper-lined muffin cups two-thirds full.
5. Bake at 350 degrees F for 20 minutes. Cool for 5 minutes before removing from pan.
6. Frost and decorate.
