This carrot salad is a nice side dish to go with chicken or turkey. Its vibrant color is perfect for a holiday dinner.

Ingredients:
- 4 large carrots
- half cup walnuts or pecans
- 2 cloves of garlic
- Small bunch of parsley
- 4 tbsp light mayo
Directions:
1. Peal and grate carrots
2. Chop walnuts, parsley and garlic (or use a garlic press)
3. Mix with carrots and mayo
4. Chill for 15 minutes in the refrigerator
