A perfect dinner – I meant dinner that would actually be eaten, or more likely quickly consumed by an impatient toddler – these biscuit sandwiches are as easy as it gets. If you don’t want to spend the time, frozen ready-made biscuits are easy for this, but I am offering an option to make your own. If making your own, pick flour with less protein (such as White Lily), better for quick rising dough such as the biscuits. The buttery texture makes up for the lack of dressing but you can add mayo or anything else your little one likes. Pictured here with the red lake (of ketchup) and a green bean bridge.
Makes 8 biscuits.
Ingredients:
- a few thin slices of ham
- grated parmesan cheese
- biscuit dough (frozen or home-made)
Home-made dough:
- 2 cups low protein flour (look for less than 10% protein on the label)
- 1/4 cup salted butter
- 1 tbsp butter for brushing
- 3/4 cup buttermilk
- 1 tsp baking powder
- 1/2 tsp baking soda
- a pinch of salt
Directions
1. Preheat the oven to 375F for frozen or 450 for home-made biscuits. Skip steps 2-7 if using frozen dough.
2. If you want to make your own biscuits, gather the ingredients – butter (cut into cubes and cold), buttermilk, flour, baking powder and baking soda.
3. Cover the work surface with a dusting of flour. If using the countertop, just wipe with oil and then dust, this way the flour on the bottom will stick to it and form a better working surface.
4. Whisk together the dry ingredients in a large bowl – flour, baking soda, powder and salt.
5. Slowly work in the cold butter chunks. I prefer to knead with my hands. Don’t overdo it, too much kneading is not good for the biscuits.
6. Add in the buttermilk, again mixing in slowly. Cover the finished dough and place in the fridge for 10 minutes.
7. Roll the dough on your work surface. Cut the biscuit pieces using the biscuit cutter or cut square shapes with a knife.
8. Slice each biscuit in two.
9. Sprinkle a generous layer of parmesan cheese on the bottom, cover with a few cut thin slices of ham.
10. Melt a tbsp of butter in a microwave.
11. Brush the biscuit tops with butter. Sprinkle the top with a little bit of parmesan cheese and place the biscuits on the cooking sheet.
12. Bake at 375F for 15 minutes for frozen, at 450F for 10-12 minutes for home-made, or when the biscuits are browning.
