I love the taste of butterscotch chips – slightly nutty and decadently sweet. They are a great company to bananas, chocolate and cinnamon in this easy and delicious butterscotch muffin recipe. We are substituting some vegetable oil with apple sauce to make them a little lighter. It’s a perfect recipe for a sweet breakfast or a nice snack on a rainy afternoon. Have your kids help you make them and they will love the taste even more!
Serves 12 muffins
Ingredients:
- 3 bananas
- 1 tsp cinnamon
- 1 cup butterscotch chips
- 1/2 cup chocolate chips
- 1/4 cup apple sauce
- 1/4 cup vegetable oil
- 2 eggs
- 1 2/3 cups flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
Directions:
1. Mash the three bananas. Add cinnamon and stir well.
2. Line the muffin pan with paper liners and spray with baking spray.
3. Beat eggs, vegetable oil and apple sauce together.
4. In a separate bowl mix flour, sugar, baking soda and baking powder.
5. Slowly add the egg mixture to the dry ingredient bowl. Add mashed bananas with cinnamon in there too.
6. Gently fold in the butterscotch chips.
7. Place a scoop of the muffin mix into each muffin liner to the top.
8. Preheat the oven to 400 degrees.
9. Cover the top of each muffin with chocolate chips and a handful of butterscotch chips. Make cute designs, so this muffin can pass for a cupcake. Place the chips towards the center of each muffin so they don’t fall off as it’s baking.
10. Bake for 20 minutes.
