One of my resolutions each year is to eat healthy, which includes lots of fruits and vegetables. I have to admit, I used to hate Brussels sprouts. Our family tends to prefer foods that are grilled, steamed, roasted and low on butter, bacon and cream. The latter would probably make the sprouts a little bit tastier. So I conceded to the steamed Brussels sprouts considering it my dose of vitamins, being especially high in magnesium, folate, B6 and vitamin K (pregnant women, take notice!). However, being a home chef, I decided you can’t give up on something before you try cooking it a different way. And yes, you can make Brussels sprouts tasty without cream or bacon. Here’s my take on it – Roasted Balsamic Brussels Sprouts.
Serves 3
Ingredients:
- raw Brussels sprouts, 4 cups
- 1 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp barbecue sauce
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tbsp seasalt
Directions:
1. Whisk all the ingredients together in a bowl. Stir gently to coat the Brussels sprouts. Let it sit to absorb the flavors while the oven is heating up.
2. Preheat the oven to 400 F.
3. Bake at 400 for 40 minutes, turning once at mid-point.
4. Enjoy!
