Nutty Artichoke Dip Recipe

This is an easy artichoke dip with a few surprising ingredients. Use the food processor for smoother texture and make sure to cook and trim the artichokes well.
A perfect party snack for any day!

Serves 8

Ingredients:

  • 5 artichokes
  • 1/2 cup pine nuts
  • 2 cloves of garlic
  • Small bunch of dill
  • 1 cup mayo
  • Salt/pepper

Directions:

1. Cook artichokes face down (stem up) in salted boiling water for 20 minutes. Let cool for 10 minutes and cut the top portion and trim the stem and leaves.

2. Peel the garlic and press with a garlic press.

3. Use the garlic press to crush the pine nuts or use the food processor.

4. Fine chop the dill.

5. Add artichokes, garlic, pine nuts, dill and mayo into the food processor. Pulse and then blend well in the food processor.

6. Add salt/pepper to taste. Mix well again.

Serve with crackers or pita bread. Add some zesty cheese to add more heat. Enjoy!
