You know pork goes with apples like waffles with maple syrup. The sweetness of the apples is amplified in this recipe by the use of honey. At the same time, mustard and garlic powder add the zing. You can certainly use plain bread crumbs but I find panko bread crumbs to be lighter and crisper, so it adds a bit of a gourmet taste to this dish. This only takes 15 minutes to prepare, start to finish.
Serves 4
Ingredients:
- 4 pork chops
- 4 tbsp panko bread crumbs
- 1 egg
- 1/2 cup apple sauce, plain
- 1 tbsp mustard, smooth
- 1 tbsp honey
- 1 tbsp kosher salt
- 1 tsp garlic powder
- 1 tbsp olive oil
Directions:
1. Mix the mustard, honey, egg and apple sauce in a bowl and whisk together until smooth. Add a table spoon of salt, mix and set aside.
2. Pour the panko crumbs on a small plate. Add 1/2 tablespoon of salt and 1 tsp garlic powder and stir.
3. Heat a tablespoon of olive oil in a large skillet.
4. Dip each pork chop first into the apple mixture, covering generously, then coat in panko crumbs and place on the skillet. Cover.
5. Cook for 5 minutes on medium heat and turn over on the other side and cook for 5 more minutes or until done. Don’t overcook the pork or it will be tough.
6. Serve with a side of apple sauce mixed with mustard for dipping.
