Sweet Dream Honey Cake recipe

honey cake Honey cake is a popular treat on Rosh Hashanah, the Jewish New Year. This version is a bit different from the traditional honey cake, but it’s deliciously sweet and nutty. The sweet memories will linger on, just like a good dream.

Serves 12+

Ingredients:

  • 2 tablespoons of honey
  • 1 cup of sugar
  • 2 eggs
  • 2 cups of flour
  • 2 tablespoons of butter
  • 1 teaspoon baking soda
  • 8 oz. sour cream (a package or half-package depending on the brand)
  • 2 tablespoons of sugar
  • 4 tablespoons chopped walnuts (optional)

Directions:

1. Combine 2 tablespoons of honey with the teaspoon of baking soda in a small dish and place in a water bath – place the dish over boiling water. You can always use a double-boiler for this, but the first option is quick and easy. Keep stirring the honey and baking soda for a few minutes until the mixture gets lighter in color.

2. Set aside to cool off.

3. Mix well 2 eggs, 2 tablespoons of melted butter and 1 cup of sugar.

4. Add the honey mixture and continue beating.

5. Slowly add 2 cups of flour, finish mixing the batter.

6. Preheat the oven to 375 F.

7. Place half of the batter into a buttered round pan, spread evenly. Bake at 375 for 20 minutes.

8. Do the same with the remaining half. If you have same-size pans, bake a few at once.

9. To prepare the filling, mix 8oz of sour cream with 2 tablespoons of sugar and beat with a mixer, slowly adding sugar.

10. Once the honey cake layers are baked let them cool off a bit. Then, spoon some of the filling on top of each layer and sprinkle chopped walnuts.

11. Taste it!

Enjoy this Honey Cake with some lemon tea or hazelnut coffee. It’s a wonderfully sweet dessert!
