Airy Flourless Chocolate Cake recipe

flourless chocolate cakeThere are few people who don’t love chocolate. Make the flavor of your chocolate dessert more intense by making a flourless chocolate cake. Our version is light and airy, since replaced some of the butter with apple sauce, and some of the sugar with honey. Yet, the taste is as great as any high-class restaurant dessert. Another great thing about this delicious chocolate concoction is that it has no flour, making it gluten-free.

Serves 12

Ingredients:

  • 8 ounces bittersweet chocolate chips or chopped bittersweet chocolate
  • 2/3 cup butter
  • 1/2 cup apple sauce
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup honey
  • 6 eggs
  • 1 cup unsweetened cocoa powder
  • a few drops of vanilla extract

Directions:

1. Heat up a medium sauce pan and melt together 8 ounces of chocolate chips, 2/3 cup butter and 1/2 cup apple sauce over low heat. Stir often until everything is blended together. Remove from heat and transfer the contents to a large bowl. Let cool for a bit.

2. Add 1/2 cup sugar, 1/2 cup cold water and 1/2 cup honey to the chocolate bowl. Stir everything well together.

3. Preheat the oven to 375F. Line the bottom of a round springform baking pan with a circle of parchment paper (cut out based on your pan size) and spray both the pan and the parchment paper over it with cooking spray, set aside. It’s important to use a springform pan, since this cake will fall apart if you try to flip it around; springform pan allows to simply remove the bottom and slide on the platter.

4. Crack 6 eggs, one at a time and add slowly to the chocolate bowl whisking continuously. It’s a good idea to crack the eggs in a separate cup first, to make sure no bad eggs or shells get into the cake batter.

5. Finish off the mix by slowly adding 1 cup unsweetened cocoa, a few drops of vanilla extract and a pinch of salt. Stir well until smooth. If you are using salted butter (which is OK), don’t add salt.

6. Pour the chocolate batter into the lined pan and bake for 40 minutes when the cake will rise.

7. Cool for a few minutes, remove from pan to cake platter and serve with your favorite gelato. Yum!
