Summer Fruit SaladA few simple ingredients and you’ve got summer in a bowl! I always get very excited with the start of farmer’s markets when you can get all the fresh fruit straight from the local farms! There is something exotic about this fruit salad – perhaps, the basis of pineapple and kiwi, or maybe mixing them with berries and almonds. My kids enjoy fruit more when it comes in new forms, and making a fruit salad is a great solution – you can make something common (strawberries in our case) look different by adding tropical fruit to it. Don’t forget, this fruit salad is also full of vitamins C, A, E, K, potassium, manganese & fiber! The almonds tie it all nicely together, adding a little crunch and a little protein, ending with a perfectly satisfying delicious snack. Each serving has only 150 calories and just the right amount of natural sweetness!

Ingredients

  • 2 kiwi, peeled
  • 10 medium strawberries
  • 1/2 cup blueberries
  • 4 slices pineapple
  • 2 tbsp sliced almonds
  • 1 tbsp lemon juice
  • 1/2 tbsp honey

Directions

  1. Chop the fruit into bite-sized pieces, throw in the blueberries.
  2. Add in a tablespoon of honey and lemon juice.
  3. Sprinkle in sliced almonds and toss.
  4. Enjoy your cool fruit salad in the sun!
