Very Strawberry Muffins Recipe

I tend to buy a lot of strawberries and sadly they don’t last very long. This handy muffin recipe, however, will find good use for those old strawberries – just cut around the damaged portion and use the rest for these strawberry muffins. Fresh berries work even better but why not be more economical? The fragrant taste and pretty color makes these strawberry muffins favorites for kids of all ages.

Serves 12 muffins

Ingredients:

  • 1.5 cups fresh strawberries
  • 1/4 cup strawberry-flavored or plain apple sauce
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 cup confectioner’s sugar
  • 1.5 cups all-purpose flour
  • 1/3 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon

Directions:

1. Chop 1.5 cups of strawberries and mix with white and brown sugar. Let sit for 5 minutes.

2. In a separate bowl mix apple sauce, milk, vanilla, cinnamon and egg; stir well.

3. Add flour, salt and baking powder to the strawberries with sugar.

4. Pour in the milk mixture and stir everything well without mushing the strawberries.

5. Preheat oven to 375 degrees F (190 degrees C).

6. Fill muffin cups with the mixture (use paper liners or oil the muffin pan lightly).

7. Lightly dust the top with confectioner’s sugar – this will give your muffins a sweet crunch and a pretty golden color. You can also skip this step.

8. Bake at 375 degrees F for 30 minutes. Let the muffins cool for 10 minutes before serving.
