Rainbow Roll-up Recipe

Serves 2

Ingredients:

  • 1 medium-size flour tortilla
  • 2 tbsp hummus
  • 2 bell peppers – red, yellow or orange
  • 1 cucumber
  • 1/2 cup cooked chicken or turkey, diced (leftover chicken or turkey is perfect!)

Directions

1. Spread the hummus over the tortilla.

2. Slice the two peppers in thin strips. Use the peppers of different colors for a more colorful effect. You will only need 1/2 of each pepper or less. Place the pepper strips over the hummus. Leave some room on the bottom to be able to roll up the tortilla later – in other words, only put the ingredients over hummus on the 2/3 of the tortilla.

3. Cut a few thin length-wise slices of the cucumber. Place over the peppers in the tortilla, following the same “saving room” idea.

4. Finally, place the diced chicken or turkey pieces on top.

5. Slowly roll the tortilla to ensure an even placement of all ingredients.

6. Slice into 1 or 2″ rolls. Enjoy this as a quick appetizer, leftovers snack or dinner for the little ones.
