Crunchy Coleslaw Recipe

Crunchy Fruity Coleslaw This Crunchy Fruity Coleslaw is a perfect recipe for Memorial Day, 4th of July or any other summer barbecue. A great side dish to burgers, ribs, or grilled chicken. It requires some unusual ingredients but the flavor is simple and fresh, with just the right amount of crunch. Surprise your family and friends with this unique slaw!

Serves 8

Ingredients:

  • 1 head green cabbage
  • ½ head red cabbage
  • 1 carrot
  • ¼ onions (preferably Vidalia)
  • 2 stems celery
  • ½ grapefruit
  • Chives
  • Parsley
  • Kosher salt
  • 2 tbsp Poppy seeds
  • 2 tbsp sugar
  • 4 tbsp mayo

Directions:

1. Chop green and red cabbage or use food processor to chop.

2. Grate 1 carrot or use food processor. Shortcut: buy pre-packaged dry coleslaw mix.

3. Add 2 tbsp poppy seeds, 2 tbsp sugar and 4 tbsp mayo. Mix everything well.

4. Fine chop ¼ Vidalia onion — the smaller, the better, to avoid any bitterness. Add to the mix.

5. Fine chop celery, a small bunch of parsley and chives. Add to the mix.

6. Cut half a grapefruit into small ½ inch pieces (use flesh only). Add to the mix.

7. Add 1 tbsp kosher salt and mix well. Taste the coleslaw and if needed, add more sugar and/or salt.

8. Chill for at least 30 minutes for best flavor.
